  • To me, as being from the country Maggi sauce comes from, this sauce became old fashioned in the late 80s/early 90s. I do not know any fellow person in Germany, who actually uses it anymore. Most people would use some kind of soy sauce instead, which tastes much more subtle. Maggi sauce has a lot of strong flavors, that are not very much desirable and it can be too salty. Usually you would use not too much of it, otherwise this strange tastes might come through in the final dish. I guess in this sense, it is almost comparable to Garum which is also horrible if you taste it pure. But of course, I have not really experienced it since the early 90s, so maybe the recipe was refined at some point. But still, I would say that soy sauce has a much more refined taste after its hundreds of years of creating it.
