The Mystic Arcanum feature states that you can choose one Xth-level spell from the warlock spell list as this arcanum. At higher levels, you gain more warlock spells of your choice that can be cast in this way. Non-warlock full casters can cast their spells with higher-level slots, but warlocks do not gain spell slots higher than fifth level.
Warlocks can change their Mystic Arcanum feature on subsequent level-ups, such as level 12, allowing them to change one spell from their feature. However, since they are not casting these arcanums with spell slots, they do not actually have spells.
As written, Mystic Arcanum does not allow spells of lower levels, but a DM could certainly allow it. The Mystic Arcanum is an appropriate level spell from the warlock spell list, but it does not state a spell from the specific spell level list.
Warlocks do not have any spell slots higher than 5th level. Arcanum lets the warlock select a spell that can be cast once per long rest. You can sacrifice your 6th level and higher Mystic Arcanum to cast Flesh to Stone without spell components. If you sacrifice a higher level spell, you might as well go to Warlock 12 to see what options you have for 6th level spells.
